Description
This comforting Hobo Casserole combines ground beef, tender potatoes, and a blend of cheeses into one easy, delicious dish. Perfect for a cozy family meal with minimal effort!
Ingredients
Scale
- 1 lb ground beef
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4–5 medium potatoes, thinly sliced
- 1 ½ cups shredded cheddar cheese
- ½ cup grated Parmesan cheese
- 1 teaspoon dried Italian seasoning
- ½ teaspoon paprika
- Salt and pepper to taste
- ½ cup beef broth or water
- ¼ cup milk (optional, for creaminess)
- Fresh parsley for garnish (optional)
Instructions
-
Cook the Ground Beef:
- In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook, breaking it up as it cooks, until browned and fully cooked. Drain any excess fat.
-
Sauté the Onion and Garlic:
- Add the chopped onion and minced garlic to the skillet with the ground beef. Cook for 2-3 minutes until softened and fragrant.
-
Assemble the Casserole:
- Preheat the oven to 375°F (190°C).
- In a greased 9×13-inch baking dish, layer the thinly sliced potatoes evenly across the bottom.
- Spoon the ground beef mixture over the potatoes.
- Sprinkle the shredded cheddar cheese and grated Parmesan cheese on top.
- Sprinkle the Italian seasoning, paprika, salt, and pepper evenly over the cheese.
-
Add Broth and Milk:
- Pour the beef broth (or water) around the edges of the casserole to keep the potatoes moist as they cook. If you prefer a creamier texture, add the milk to the casserole at this stage.
-
Bake the Casserole:
- Cover the casserole with aluminum foil and bake for 35-40 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the potatoes are tender and the cheese is bubbly and golden.
-
Serve:
- Garnish with fresh parsley, if desired, and serve hot.
Notes
- For extra flavor, you can add vegetables like bell peppers or mushrooms to the ground beef mixture.
- If you prefer a crunchier topping, leave the casserole uncovered for the entire baking time.
- This casserole can be prepared ahead of time and refrigerated until ready to bake. Simply adjust baking time as needed.
