Description

This comforting Hobo Casserole combines ground beef, tender potatoes, and a blend of cheeses into one easy, delicious dish. Perfect for a cozy family meal with minimal effort!

Ingredients

Scale
  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 45 medium potatoes, thinly sliced
  • 1 ½ cups shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon paprika
  • Salt and pepper to taste
  • ½ cup beef broth or water
  • ¼ cup milk (optional, for creaminess)
  • Fresh parsley for garnish (optional)

Instructions

  • Cook the Ground Beef:

    • In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook, breaking it up as it cooks, until browned and fully cooked. Drain any excess fat.
  • Sauté the Onion and Garlic:

    • Add the chopped onion and minced garlic to the skillet with the ground beef. Cook for 2-3 minutes until softened and fragrant.
  • Assemble the Casserole:

    • Preheat the oven to 375°F (190°C).
    • In a greased 9×13-inch baking dish, layer the thinly sliced potatoes evenly across the bottom.
    • Spoon the ground beef mixture over the potatoes.
    • Sprinkle the shredded cheddar cheese and grated Parmesan cheese on top.
    • Sprinkle the Italian seasoning, paprika, salt, and pepper evenly over the cheese.
  • Add Broth and Milk:

    • Pour the beef broth (or water) around the edges of the casserole to keep the potatoes moist as they cook. If you prefer a creamier texture, add the milk to the casserole at this stage.
  • Bake the Casserole:

    • Cover the casserole with aluminum foil and bake for 35-40 minutes.
    • Remove the foil and bake for an additional 10-15 minutes, or until the potatoes are tender and the cheese is bubbly and golden.
  • Serve:

    • Garnish with fresh parsley, if desired, and serve hot.

Notes

  • For extra flavor, you can add vegetables like bell peppers or mushrooms to the ground beef mixture.
  • If you prefer a crunchier topping, leave the casserole uncovered for the entire baking time.
  • This casserole can be prepared ahead of time and refrigerated until ready to bake. Simply adjust baking time as needed.
