- 4 bone-in, skin-on chicken breasts
- ½ teaspoon salt
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon ground black pepper
- ¼ teaspoon paprika
- ¼ teaspoon chili powder
- ½ cup avocado oil or canola oil
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with foil and place a cooking rack on top.
- Pat the chicken breasts dry with paper towels.
- In a small bowl, combine salt, garlic powder, onion powder, black pepper, paprika, and chili powder. Rub the spice mixture evenly all over the chicken breasts.
- In a large skillet, heat avocado oil over medium-high heat until hot.
- Carefully place the chicken breasts skin-side down into the hot skillet and cook for 2 minutes until the skin is golden brown.
- Flip the chicken breasts over and cook for another 2 minutes.
- Transfer the seared chicken breasts to the prepared baking sheet. Drizzle 1 teaspoon of the oil from the skillet over each chicken breast.
- Transfer the baking sheet to the preheated oven and bake for 45 minutes, or until the internal temperature of the chicken reaches 165°F (75°C).
- Remove from the oven and transfer the chicken to a plate. Let the chicken rest for 10 minutes before slicing and serving.
Notes
- To store: Place leftover chicken breasts in an airtight container in the refrigerator for up to 3-4 days.
- To reheat: Place the chicken in a covered dish in the oven at 350°F (175°C) for about 10-15 minutes, or until warmed through. Alternatively, you can microwave the chicken, but be sure to cover it with a damp paper towel to retain moisture.
- To freeze: Wrap the chicken tightly in plastic wrap or foil, then store in a freezer bag for up to 2-3 months.
