Ingredients
For the Crust:

1/3 cup butter, melted

1 1/4 cups graham cracker crumbs

4 egg yolks

Zest and juice from 6 key limes (about 1/2 cup juice)

14 ounces sweetened condensed milk

Instructions

Preheat oven: Preheat your oven to 350°F (175°C).

Make the crust: In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture firmly into the bottom and sides of a 9-inch pie pan. Bake for 8–10 minutes until golden. Set aside to cool slightly.

Prepare the filling: In a medium bowl, whisk together egg yolks, lime zest, and lime juice until well combined. Add the sweetened condensed milk and stir until smooth and creamy.

Bake the pie: Pour the filling into the prepared crust and smooth the top. Bake for 15–17 minutes, until the filling is just set and slightly jiggles in the center.

Cool and chill: Remove from the oven and let cool to room temperature, then refrigerate for at least 3 hours or overnight until fully set.
- Garnish and serve: Top with whipped cream and a sprinkle of lime zest or lime slices before serving, if desired.

Fresh key limes are ideal, but bottled key lime juice can be used as a substitute.
