Description

This classic Key Lime Pie is a tangy, creamy dessert with a sweet graham cracker crust and a zesty lime filling. Made with just a few simple ingredients, it’s the perfect balance of sweet and tart, ideal for warm weather gatherings or anytime you want a refreshing treat.

For the Crust:

  • 1/3 cup butter, melted

  • 1/4 cup sugar

  • 1 1/4 cups graham cracker crumbs

For the Filling:

  • 4 egg yolks

  • Zest and juice from 6 key limes (about 1/2 cup juice)

  • 14 ounces sweetened condensed milk

  • Additional Nellie & Joe’s Key West Lime Juice, if needed to reach 1/2 cup total lime juice

For Garnish (Optional):

  • Whipped topping

  • Additional lime zest or lime slices


Instructions

  • Preheat oven: Preheat your oven to 350°F (175°C).

  • Make the crust: In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture firmly into the bottom and sides of a 9-inch pie pan. Bake for 8–10 minutes until golden. Set aside to cool slightly.

  • Prepare the filling: In a medium bowl, whisk together egg yolks, lime zest, and lime juice until well combined. Add the sweetened condensed milk and stir until smooth and creamy.

  • Bake the pie: Pour the filling into the prepared crust and smooth the top. Bake for 15–17 minutes, until the filling is just set and slightly jiggles in the center.

  • Cool and chill: Remove from the oven and let cool to room temperature, then refrigerate for at least 3 hours or overnight until fully set.

  • Garnish and serve: Top with whipped cream and a sprinkle of lime zest or lime slices before serving, if desired.

Notes

  • Fresh key limes are ideal, but bottled key lime juice can be used as a substitute.

  • For a more intense lime flavor, add extra zest to the filling.

  • Store in the refrigerator for up to 3 days.
