For the Lavender Sugar:

  • 22.75 oz granulated sugar (3 ¼ cups)

  • 2 tablespoons culinary dried lavender

For the Crust:

  • 8 oz unsalted butter (1 cup), melted and slightly cooled

  • 3.5 oz lavender sugar (½ cup)

  • 2 teaspoons vanilla extract

  • ½ teaspoon salt

  • 9 oz all-purpose flour (2 cups)

For the Filling:

  • 8 large eggs

  • 1 ¼ cups fresh lemon juice

  • 19.25 oz lavender sugar (2 ¾ cups)

  • Zest of 2 lemons (about 2 tablespoons)

  • 2.25 oz all-purpose flour (½ cup)

For Serving:

  • Powdered sugar, for dusting


Instructions

  • Make the lavender sugar:
    In a small bowl, combine the granulated sugar and dried lavender. Using your hands or a spoon, rub the lavender into the sugar until fragrant. Let sit for 1-2 hours to allow the flavors to infuse. Afterward, strain out the lavender and store the lavender sugar in an airtight container.

  • Prepare the crust:
    Preheat your oven to 350°F (175°C). Grease and line a 9×13-inch baking pan with parchment paper.
    In a medium bowl, mix the melted butter, lavender sugar, vanilla extract, and salt. Gradually add the all-purpose flour and stir until combined.
    Press the dough evenly into the bottom of the prepared pan.
    Bake for 15-20 minutes, or until the crust is lightly golden. Remove from the oven and set aside to cool slightly.

  • Make the filling:
    In a large bowl, whisk the eggs, lemon juice, lavender sugar, and lemon zest until smooth and well combined.
    Add the flour and whisk until fully incorporated.

  • Assemble and bake:
    Pour the lemon filling over the cooled crust. Return the pan to the oven and bake for 25-30 minutes, or until the filling is set and the edges are lightly golden.
    Remove from the oven and let the bars cool completely in the pan.

  • Serve:
    Once the bars are completely cooled, dust with powdered sugar and cut into squares. Serve and enjoy!
