Ingredients
For the Lavender Sugar:

For the Crust:

8 oz unsalted butter (1 cup), melted and slightly cooled

3.5 oz lavender sugar (½ cup)

2 teaspoons vanilla extract

9 oz all-purpose flour (2 cups)

1 ¼ cups fresh lemon juice

19.25 oz lavender sugar (2 ¾ cups)

Zest of 2 lemons (about 2 tablespoons)

Instructions

Make the lavender sugar:
In a small bowl, combine the granulated sugar and dried lavender. Using your hands or a spoon, rub the lavender into the sugar until fragrant. Let sit for 1-2 hours to allow the flavors to infuse. Afterward, strain out the lavender and store the lavender sugar in an airtight container. -
Prepare the crust:
Preheat your oven to 350°F (175°C). Grease and line a 9×13-inch baking pan with parchment paper.
In a medium bowl, mix the melted butter, lavender sugar, vanilla extract, and salt. Gradually add the all-purpose flour and stir until combined.
Press the dough evenly into the bottom of the prepared pan.
Bake for 15-20 minutes, or until the crust is lightly golden. Remove from the oven and set aside to cool slightly. -
Make the filling:
In a large bowl, whisk the eggs, lemon juice, lavender sugar, and lemon zest until smooth and well combined.
Add the flour and whisk until fully incorporated. -
Assemble and bake:
Pour the lemon filling over the cooled crust. Return the pan to the oven and bake for 25-30 minutes, or until the filling is set and the edges are lightly golden.
Remove from the oven and let the bars cool completely in the pan. - Serve:
Once the bars are completely cooled, dust with powdered sugar and cut into squares. Serve and enjoy!
