Description

Lemon Crinkle Cookies are a delightful treat that combines the tangy flavor of fresh lemon with the sweetness of sugar. These cookies have a light, tender texture and a beautiful crinkled appearance that makes them both delicious and visually appealing. Perfect for springtime or any lemon lover!

For the Cookies:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup butter, softened
  • 1 cup sugar
  • 1 large egg
  • 2 tablespoons fresh lemon juice (Note: Double the lemon juice if you want a stronger lemon flavor. For a more pronounced lemon taste, consider adding lemon extract instead.)
  • 1 teaspoon lemon zest
  • ½ teaspoon vanilla extract
  • 58 drops yellow food coloring (optional)

For Rolling:

 

  • ¼ cup sugar
  • ¾ cup powdered sugar (icing sugar or confectioners sugar)

Instructions

  • Prepare the Dough:

    • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.
    • In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
    • In a separate large bowl, cream together the softened butter and sugar until light and fluffy.
    • Beat in the egg, lemon juice, lemon zest, and vanilla extract until well combined. If you’re using food coloring, add it at this stage.
    • Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix the dough.
  • Roll the Cookies:

    • In a small bowl, combine the sugar and powdered sugar for rolling.
    • Scoop tablespoon-sized portions of dough and roll them into balls.
    • Roll each dough ball in the sugar and powdered sugar mixture until thoroughly coated.
    • Place the dough balls about 2 inches apart on the prepared baking sheet.
  • Bake the Cookies:

    • Bake the cookies in the preheated oven for 8-10 minutes, or until the edges are lightly golden and the centers have set. The cookies should have a crinkled appearance.
    • Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For a more intense lemon flavor, you can add lemon extract instead of doubling the lemon juice.
