Description

This Lemon Vinaigrette Salad Dressing is a simple yet flavorful blend of fresh lemon juice and extra virgin olive oil. The tangy lemon combines perfectly with the smooth olive oil to create a light, refreshing dressing that enhances salads, roasted vegetables, or grilled meats. A healthier alternative to store-bought dressings, this easy-to-make vinaigrette is also customizable to your taste.

Ingredients

Scale
  • 2 tablespoons fresh lemon juice
  • 1/4 cup extra virgin olive oil
  • 1 teaspoon Dijon mustard (optional)
  • 1 teaspoon honey or maple syrup (optional)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 small garlic clove, minced (optional)

Instructions

  • In a small bowl or jar, combine the fresh lemon juice, Dijon mustard (if using), honey or maple syrup (if using), and minced garlic (if using).
  • Whisk together until smooth.
  • Slowly drizzle in the olive oil while whisking to emulsify and create a smooth dressing.
  • Season with salt and freshly ground black pepper to taste.
  • Taste and adjust the flavor — add more lemon juice for tanginess, more honey for sweetness, or more mustard for extra creaminess.
  • Drizzle over your favorite salad or roasted vegetables. Store any leftovers in an airtight container in the refrigerator for up to 1 week. Shake or whisk before use.

Notes

  • Fresh lemon juice provides the best flavor; avoid using bottled lemon juice if possible.
  • For a creamier dressing, add a tablespoon of Greek yogurt, avocado, or tahini.
  • This dressing can also be used as a marinade for grilled meats or tofu.
  • Store the vinaigrette in a jar with a tight lid for easy shaking and storage.
