  • 2 tablespoons olive oil

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 lb boneless, skinless chicken breast, cubed
  • 1/2 cup ranch dressing
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup green onions, chopped
  • Fresh parsley, chopped (for garnish)

Instructions

  • Prepare the Potatoes:
    • Preheat the oven to 400°F (200°C). Toss the cubed potatoes with olive oil, salt, pepper, garlic powder, and onion powder. Spread the potatoes evenly on a baking sheet and roast in the preheated oven for 20-25 minutes, or until tender and golden brown.
  • Cook the Chicken:
    • While the potatoes are roasting, heat a skillet over medium heat. Add the cubed chicken and cook for 6-8 minutes, or until browned and cooked through. Season with a pinch of salt and pepper. Remove from heat.
  • Assemble the Casserole:
    • In a large mixing bowl, combine the roasted potatoes, cooked chicken, ranch dressing, and half of the shredded cheddar cheese. Stir to combine.
