This Magic Lemon Cobbler Delight is a refreshing and indulgent dessert with a magical twist! The rich, tangy lemon flavor shines through a luscious cobbler, while a secret “magic” happens during baking, creating a golden, gooey base with a crisp top. Perfect for those who love citrus desserts.
Ingredients
-
½ cup unsalted butter
-
1 cup all-purpose flour
-
1½ cups granulated sugar, divided
-
1 tbsp baking powder
-
¼ tsp salt
-
1 cup milk
-
¼ cup lemon juice
-
Zest of 1 lemon
-
2 cups hot water
Instructions
-
Preheat your oven to 350°F (175°C).
-
In a 9×9-inch baking dish, melt the butter by placing it in the oven while it preheats. Once melted, remove it from the oven and set aside.
-
In a mixing bowl, combine the flour, 1 cup of granulated sugar, baking powder, and salt. Stir well.
-
Add the milk, lemon juice, and lemon zest to the dry ingredients. Mix until smooth.
-
Pour the batter over the melted butter in the baking dish, but do not stir.
-
Sprinkle the remaining ½ cup of granulated sugar evenly over the top of the batter.
-
Carefully pour the hot water over the batter (again, do not stir).
-
Bake for 40-45 minutes or until the top is golden brown and the cobbler has set. The “magic” happens as it bakes, forming a gooey lemony layer at the bottom.
-
Allow the cobbler to cool slightly before serving. Serve warm with whipped cream or vanilla ice cream for an extra indulgence.
Notes

-
You can add more lemon zest if you prefer a stronger lemon flavor.
- For an even more refreshing touch, garnish with additional lemon zest or a sprig of mint.
