  • ½ cup unsalted butter

  • 1 cup all-purpose flour

  • 1½ cups granulated sugar, divided

  • 1 tbsp baking powder

  • ¼ tsp salt

  • 1 cup milk

  • ¼ cup lemon juice

  • Zest of 1 lemon

  • 2 cups hot water


Instructions

  • Preheat your oven to 350°F (175°C).

  • In a 9×9-inch baking dish, melt the butter by placing it in the oven while it preheats. Once melted, remove it from the oven and set aside.

  • In a mixing bowl, combine the flour, 1 cup of granulated sugar, baking powder, and salt. Stir well.

  • Add the milk, lemon juice, and lemon zest to the dry ingredients. Mix until smooth.

  • Pour the batter over the melted butter in the baking dish, but do not stir.

  • Sprinkle the remaining ½ cup of granulated sugar evenly over the top of the batter.

  • Carefully pour the hot water over the batter (again, do not stir).

  • Bake for 40-45 minutes or until the top is golden brown and the cobbler has set. The “magic” happens as it bakes, forming a gooey lemony layer at the bottom.

 

  • Allow the cobbler to cool slightly before serving. Serve warm with whipped cream or vanilla ice cream for an extra indulgence.
