  • ½ cup (1 stick) butter, melted
  • 1 cup flour
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • 1 cup sugar
  • 1 cup buttermilk
  • 1 tsp vanilla extract
  • 1 tsp lemon extract
  • 21 oz can lemon pie filling

Instructions

  • Preheat the oven to 350°F (175°C).
  • Melt the butter and pour it into a greased 9×9-inch baking dish.
  • In a medium bowl, whisk together the flour, baking powder, salt, and sugar.
  • Stir in the buttermilk, vanilla extract, and lemon extract until well combined.
  • Pour the batter over the melted butter in the baking dish (do not stir).
  • Spoon the lemon pie filling over the batter evenly (do not stir).
  • Bake in the preheated oven for 40-45 minutes, or until the cobbler is golden and bubbly.
  • Allow the cobbler to cool slightly before serving. The cobbler will form its own crust during baking.
