For the Chicken:
- 4 chicken breasts
- Salt and pepper, to taste
- 2 tablespoons olive oil
For the Sun-Dried Tomato Cream Sauce:
- 4 cloves garlic, minced
- ½ cup chicken broth
- 1 tablespoon all-purpose flour
- 1 cup heavy cream
- ½ cup sun-dried tomatoes in oil (plus an extra tablespoon of oil from the jar)
- 1 tablespoon tomato paste
- ½ teaspoon dried oregano
- ½ teaspoon red pepper flakes
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 cup fresh basil, chopped
- ½ cup freshly grated parmesan cheese
Instructions
- Slice the chicken breasts into strips lengthwise and season with salt and pepper.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
- Sear the chicken strips on each side for about 3-4 minutes or until golden and crispy. Transfer the chicken to a plate and set aside.
- In the same skillet, add the minced garlic and cook for 30 seconds.
- Pour in ½ cup chicken broth and stir in 1 tablespoon of all-purpose flour. Mix and allow the mixture to thicken.
- Add 1 cup of heavy cream, ½ cup sun-dried tomatoes, 1 tablespoon of sun-dried tomato oil, 1 tablespoon of tomato paste, ½ teaspoon dried oregano, ½ teaspoon red pepper flakes, ½ teaspoon salt, and ¼ teaspoon black pepper. Stir and let simmer on low heat for 2-3 minutes until it thickens.
- Remove the skillet from the heat and stir in 1 cup of fresh chopped basil and ½ cup of freshly grated parmesan cheese.
- Add the cooked chicken back into the pan, spooning the sauce over the chicken.
- Serve the chicken and sauce on plates, and enjoy!
