For the Chicken:

  • 4 chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil

For the Sun-Dried Tomato Cream Sauce:

  • 4 cloves garlic, minced
  • ½ cup chicken broth
  • 1 tablespoon all-purpose flour
  • 1 cup heavy cream
  • ½ cup sun-dried tomatoes in oil (plus an extra tablespoon of oil from the jar)
  • 1 tablespoon tomato paste
  • ½ teaspoon dried oregano
  • ½ teaspoon red pepper flakes
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup fresh basil, chopped
  • ½ cup freshly grated parmesan cheese

Instructions

  • Slice the chicken breasts into strips lengthwise and season with salt and pepper.
  • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
  • Sear the chicken strips on each side for about 3-4 minutes or until golden and crispy. Transfer the chicken to a plate and set aside.
  • In the same skillet, add the minced garlic and cook for 30 seconds.
  • Pour in ½ cup chicken broth and stir in 1 tablespoon of all-purpose flour. Mix and allow the mixture to thicken.
  • Add 1 cup of heavy cream, ½ cup sun-dried tomatoes, 1 tablespoon of sun-dried tomato oil, 1 tablespoon of tomato paste, ½ teaspoon dried oregano, ½ teaspoon red pepper flakes, ½ teaspoon salt, and ¼ teaspoon black pepper. Stir and let simmer on low heat for 2-3 minutes until it thickens.
  • Remove the skillet from the heat and stir in 1 cup of fresh chopped basil and ½ cup of freshly grated parmesan cheese.
  • Add the cooked chicken back into the pan, spooning the sauce over the chicken.
  • Serve the chicken and sauce on plates, and enjoy!

  • This dish pairs well with pasta, mashed potatoes, or a side salad.
  • For extra creaminess, you can add a little more heavy cream or parmesan cheese.
  • You can also use fresh chicken breasts instead of sliced if you prefer a whole breast.
