Ingredients
-
1 can black beans (2 cups of beans)
-
2 tomatoes, diced
-
1/2 white onion, chopped
-
2 garlic cloves, minced
-
1/2 chipotle pepper, minced (adjust to taste)
-
1.5 cups stock (vegetable or chicken)
-
1/4 teaspoon oregano
-
1/2 teaspoon salt
-
Black pepper, to taste
Instructions
-
Prepare the vegetables:
Dice the tomatoes, chop the onion, and mince the garlic and chipotle pepper. -
Sauté the aromatics:
In a large pot, heat a small amount of oil over medium heat. Add the chopped onion and garlic and sauté for 3-4 minutes until softened and fragrant. -
Add the tomatoes and chipotle:
Stir in the diced tomatoes and minced chipotle pepper. Cook for an additional 5 minutes, letting the tomatoes break down. -
Add the beans and stock:
Add the black beans (with their liquid) and the stock to the pot. Stir in the oregano, salt, and black pepper. -
Simmer:
Bring the soup to a simmer and cook for 10-15 minutes, allowing the flavors to meld together. -
Blend (optional):
For a smoother texture, use an immersion blender to blend the soup to your desired consistency, or transfer to a blender in batches and puree.
-
Serve:
Serve hot, and garnish with optional toppings such as sour cream, cilantro, or lime wedges.
Notes
-
For extra heat, add more chipotle pepper or a dash of hot sauce.
-
If you prefer a chunkier soup, skip the blending step.
- Feel free to add other ingredients like corn, bell peppers, or spinach for added flavor and nutrition.
