Description

Ingredients

  • 1 can black beans (2 cups of beans)

  • 2 tomatoes, diced

  • 1/2 white onion, chopped

  • 2 garlic cloves, minced

  • 1/2 chipotle pepper, minced (adjust to taste)

  • 1.5 cups stock (vegetable or chicken)

  • 1/4 teaspoon oregano

  • 1/2 teaspoon salt

  • Black pepper, to taste


Instructions

  • Prepare the vegetables:
    Dice the tomatoes, chop the onion, and mince the garlic and chipotle pepper.

  • Sauté the aromatics:
    In a large pot, heat a small amount of oil over medium heat. Add the chopped onion and garlic and sauté for 3-4 minutes until softened and fragrant.

  • Add the tomatoes and chipotle:
    Stir in the diced tomatoes and minced chipotle pepper. Cook for an additional 5 minutes, letting the tomatoes break down.

  • Add the beans and stock:
    Add the black beans (with their liquid) and the stock to the pot. Stir in the oregano, salt, and black pepper.

  • Simmer:
    Bring the soup to a simmer and cook for 10-15 minutes, allowing the flavors to meld together.

  • Blend (optional):
    For a smoother texture, use an immersion blender to blend the soup to your desired consistency, or transfer to a blender in batches and puree.

 

  • Serve:
    Serve hot, and garnish with optional toppings such as sour cream, cilantro, or lime wedges.

Notes

  • For extra heat, add more chipotle pepper or a dash of hot sauce.

  • If you prefer a chunkier soup, skip the blending step.
