Description

Mississippi Mud Potatoes are a creamy, cheesy, and savory side dish that’s loaded with all the best flavors. Russet potatoes are baked to perfection, then combined with melted butter, garlic, onion powder, and smoked paprika for extra depth. Topped with cheddar cheese, crumbled bacon, and sour cream, this dish is the ultimate comfort food — perfect for holidays, potlucks, or a cozy weeknight dinner.

Ingredients

Scale
  • 3 lbs russet potatoes, peeled and diced into 1-inch cubes

  • ½ cup unsalted butter, melted

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • ½ tsp smoked paprika (optional)

  • 1 tsp salt

  • ½ tsp black pepper

  • 2 cups shredded cheddar cheese

  • 1 cup cooked and crumbled bacon

  • ½ cup sour cream

  • ¼ cup chopped green onions (for garnish)

Instructions

  • Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish or coat with cooking spray.

  • Cook the Potatoes: Place the diced potatoes in a large pot and cover with water. Bring to a boil over medium-high heat and cook for 10–12 minutes, or until tender when pierced with a fork. Drain well.

  • Prepare the Potato Mixture: In a large mixing bowl, combine the melted butter, garlic powder, onion powder, smoked paprika, salt, and black pepper. Add the cooked potatoes and gently toss to coat.

  • Assemble the Dish: Transfer the buttered potato mixture into the prepared baking dish. Sprinkle the shredded cheddar cheese and crumbled bacon evenly over the top.

  • Bake: Bake for 20 minutes, or until the cheese is melted and bubbly.

  • Finish and Serve: Remove from the oven and top with sour cream and chopped green onions. Serve immediately.

Notes

  • For extra flavor, use a mix of sharp cheddar and mozzarella cheese.

  • You can prepare the potatoes ahead of time and refrigerate them before baking. Just add a few extra minutes to the baking time.

  • You can also add a layer of ranch dressing or cream cheese for extra creaminess.
