These No Bake Oatmeal Cookies are a quick and easy treat that require no baking! - 1/2 cup unsalted butter
- 1/2 cup milk (dairy or dairy-free)
- 2 cups coconut sugar
- 1/4 cup cacao powder (or cocoa powder)
- 1/2 cup almond butter
- 1 teaspoon vanilla extract
- 3 cups quick cooking or rolled oats
Instructions
- In a medium saucepan, melt the butter over medium heat.
- Add the milk, coconut sugar, and cacao powder to the melted butter. Stir until the mixture is well combined and smooth.
- Bring the mixture to a boil, stirring constantly. Once it begins to boil, let it boil for 1-2 minutes, then remove from the heat.
- Stir in the almond butter and vanilla extract, mixing until fully incorporated.
- Add the oats to the mixture, stirring until all of the oats are coated with the chocolate mixture.
- Drop spoonfuls of the cookie mixture onto a parchment-lined baking sheet, shaping them into cookies.
- Allow the cookies to cool and set at room temperature for about 30 minutes to 1 hour, or place them in the fridge to speed up the process.
- Once set, enjoy your delicious no-bake oatmeal cookies!

- Store the cookies in an airtight container at room temperature for up to 1 week, or in the refrigerator for longer shelf life.
