This easy and flavorful One Pan Baked Feta Pasta is a crowd-pleaser! The feta cheese and cherry tomatoes bake together to create a creamy, tangy sauce that perfectly coats the pasta. With just a few ingredients, this dish is a quick and delicious weeknight meal.


Ingredients

  • 15 ounces (453g) pasta
  • 2 pints cherry tomatoes (approx. 1 and 1/2 pounds)
  • 8 ounces (225g) feta cheese block
  • 1/2 cup olive oil
  • 1/4 cup fresh basil, chopped
  • 2 to 4 cloves garlic, chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Freshly grated Parmesan cheese (optional for serving)

Instructions

  • Preheat the oven to 400°F (200°C).
  • In a baking dish (9×13-inch works well), add the cherry tomatoes and drizzle with olive oil. Season with salt and pepper.
  • Place the block of feta cheese in the center of the tomatoes and drizzle a little more olive oil over the top.
  • Bake in the preheated oven for about 30 minutes, or until the tomatoes have burst and the feta is soft and slightly browned.
  • While the tomatoes and feta bake, cook the pasta according to package instructions until al dente. Reserve about 1/2 cup of pasta water and drain the rest.
  • Once the feta and tomatoes are done baking, remove from the oven and add the chopped garlic to the dish. Stir everything together, mashing the feta and tomatoes to create a creamy sauce.
  • Add the cooked pasta to the dish along with the reserved pasta water. Toss everything together until the pasta is well coated with the sauce.
  • Stir in the fresh basil and serve with grated Parmesan cheese, if desired.

Notes

  • You can use any pasta you prefer, but short pasta shapes like penne or rigatoni work best for holding the sauce.
  • For a spicy kick, add a pinch of red pepper flakes before baking.
  • You can store leftovers in the fridge for up to 3 days, but the dish is best enjoyed fresh.
