- 2/3 cup egg whites (or additional milk of choice)
- 1/4 cup pure maple syrup (or agave or honey)
- 1 tsp pure vanilla extract (optional)
Instructions
- Prepare the Bread: Tear or slice the thick bread into bite-sized pieces. Spread the bread pieces evenly in the bottom of a greased 9×13-inch baking dish.
- Layer the Berries: Add the berries on top of the bread. You can use a combination of blueberries, strawberries, raspberries, and blackberries for a colorful mix.
- Mix the Wet Ingredients: In a large bowl, whisk together the applesauce (or mashed banana), milk, egg whites (or additional milk), maple syrup, and vanilla extract (if using) until well combined.
- Pour the Mixture: Pour the wet mixture evenly over the bread and berries in the baking dish. Press down gently to ensure the bread soaks up the liquid.
- Refrigerate Overnight: Cover the casserole with plastic wrap or foil and refrigerate it overnight. This allows the flavors to meld and the bread to soak up the mixture.
- Bake: In the morning, preheat your oven to 350°F (175°C). Remove the casserole from the fridge, and bake for 45-55 minutes or until the top is golden and the casserole is set.
