These Parmesan Baked Potatoes are crispy on the outside and tender on the inside, with the perfect combination of melted butter, Parmesan, garlic, and Italian seasoning. A simple yet flavorful side dish that’s sure to elevate any meal.

  • 6 tablespoons unsalted butter, melted
  • 3 tablespoons grated Parmesan cheese
  • 8 medium red potatoes, halved lengthwise
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian seasoning
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
  • In a small bowl, mix the melted butter, grated Parmesan, garlic powder, and dried Italian seasoning.
  • Place the halved red potatoes on the prepared baking sheet, cut side up.
  • Brush the Parmesan butter mixture generously over the cut sides of each potato.
  • Season with salt and freshly ground black pepper to taste.
  • Bake the potatoes in the preheated oven for 30-35 minutes, or until the potatoes are golden and crispy on the edges and easily pierced with a fork.
  • Remove from the oven and garnish with freshly chopped parsley before serving.

Notes

  • For extra crispiness, you can flip the potatoes halfway through the baking time.
