Dough:

  • ¾ cup butter, softened to room temperature

  • 2 (3.4 oz) boxes of instant pistachio pudding (just the dry mix)

  • ½ cup sugar

  • 2 eggs

  • 1½ tsp vanilla

  • ¼ tsp almond extract

  • 2 cups flour

  • ¼ tsp baking powder

  • Dash of salt

Frosting:

  • 4 oz cream cheese, softened to room temperature

  • ¼ cup soft butter

  • 2½ cups powdered sugar

  • 1 tsp vanilla

  • ¼ tsp almond extract

  • Dash of salt

  • ¼ cup chopped pistachios for garnish (optional)


Instructions

  • Preheat the oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper or lightly grease it.

  • In a large mixing bowl, beat the softened butter, pistachio pudding mix, and sugar until creamy and smooth.

  • Add the eggs, vanilla, and almond extract to the mixture and beat until well combined.

  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

  • Spread the dough evenly in the prepared baking dish. Bake for 20-25 minutes, or until the bars are set and a toothpick inserted into the center comes out clean. Let the bars cool completely.

  • While the bars cool, prepare the frosting by beating the softened cream cheese and butter together until smooth. Gradually add the powdered sugar, vanilla, almond extract, and salt. Continue beating until the frosting is smooth and fluffy.

  • Once the bars are fully cooled, spread the frosting evenly over the top.

  • Optional: Sprinkle with chopped pistachios for garnish.

  • Cut into squares and serve.

Notes

  • For a more intense pistachio flavor, you can add finely chopped pistachios into the dough as well.

  • Make sure the bars are completely cooled before adding the frosting to prevent it from melting.
