Ingredients
Scale
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- ½ cup packed light brown sugar
- 1 large egg
- 2 teaspoons pure vanilla extract
- 2 ¼ cups all-purpose flour
- 1 teaspoon baking soda
- ¼ teaspoon baking powder
- ½ teaspoon salt
- 10 caramel candies, melted (or ⅓ cup caramel sauce)
- Flaky sea salt for topping
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and light brown sugar until light and fluffy, about 2-3 minutes.
- Add the egg and vanilla extract to the mixture and beat until fully combined.
- In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Melt the caramel candies in the microwave or on the stovetop until smooth. If using caramel sauce, simply warm it slightly to make it easier to mix.
- Fold the melted caramel into the cookie dough.
- Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, leaving about 2 inches between each cookie.
- Slightly flatten each dough ball with the back of a spoon or your fingers.
- Bake for 8-10 minutes, or until the edges are golden and the cookies are set.
- Remove from the oven and immediately sprinkle the cookies with flaky sea salt.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
- You can use store-bought caramel sauce as a shortcut if you prefer.
- For extra caramel flavor, drizzle some caramel sauce over the top of the cooled cookies.
- Make sure not to overbake the cookies to ensure they stay soft and chewy.
