- 4 large chicken breasts
- 150 g (1 cup) shredded mozzarella cheese (or fresh mozzarella slices)
- 100 g (1 cup) roasted red peppers, sliced
- 100 g (3 cups) fresh spinach
- 2 cloves garlic, minced
- 2 tbsp olive oil (divided)
- 1 tsp dried Italian seasoning
- 1/2 tsp paprika
- Salt and pepper, to taste
- Toothpicks or kitchen twine
Instructions
- Preheat the Oven:
Preheat your oven to 375°F (190°C). - Prepare the Chicken:
Use a sharp knife to carefully cut a pocket into each chicken breast, being sure not to cut all the way through. This will create space for the stuffing. - Make the Stuffing:
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
Add the fresh spinach to the skillet and cook for 2-3 minutes, or until wilted.
Remove from heat and stir in the roasted red peppers and shredded mozzarella cheese. Season with a pinch of salt, pepper, and Italian seasoning. - Stuff the Chicken:
Stuff each chicken breast with the spinach, roasted pepper, and mozzarella mixture. Secure the opening with toothpicks or kitchen twine to keep the stuffing inside while cooking. - Cook the Chicken:
Heat the remaining 1 tablespoon of olive oil in an oven-safe skillet over medium-high heat.
Season the outside of the chicken breasts with paprika, salt, and pepper.
Once the skillet is hot, add the chicken breasts and sear them for 2-3 minutes on each side until golden brown. - Finish in the Oven:
Transfer the skillet with the chicken to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/74°C). - Serve:
Once cooked, remove the toothpicks or kitchen twine. Let the chicken rest for a few minutes before serving. Garnish with additional herbs if desired.
Notes
- You can use fresh mozzarella slices for a creamier, meltier stuffing.
- If you prefer more flavor, add some crushed red pepper flakes to the stuffing for a bit of heat.
