Description

A festive, no-bake layered dessert inspired by the classic Shamrock Shake. Creamy chocolate cheesecake, mint pudding, and Oreo crust come together with whipped cream and festive garnishes for a show-stopping, crowd-pleasing treat.

For the Oreo Crust:

  • 36 Oreo cookies, ground (mint or regular)

  • ½ cup unsalted butter, melted

Chocolate Cheesecake Layer:

  • ½ cup unsalted butter, softened

  • 8 oz cream cheese (brick style), softened

  • 1 cup powdered sugar

  • 1 teaspoon vanilla extract

  • 2 (0.7 oz) envelopes instant hot cocoa mix, milk chocolate flavor

  • 1 tablespoon cocoa powder

  • 1¼ cups Cool Whip (or homemade whipped cream, whipped to stiff peaks)

Mint Layer:

  • 3 (3.4 oz) packages vanilla instant pudding mix

  • 3 cups milk

  • 1 teaspoon mint extract (adjust to taste)

  • Green food coloring, a few drops

  • 3½ cups Cool Whip (or homemade whipped cream, whipped to stiff peaks)

Garnish:

  • 2 cups whipped cream

  • Maraschino cherries

  • Green sprinkles


Instructions

  • Prepare the Oreo crust: Mix ground Oreos with melted butter until combined. Press firmly into the bottom of a 9×13-inch dish. Chill while preparing other layers.

  • Chocolate Cheesecake Layer: Beat butter and cream cheese until smooth. Add powdered sugar, vanilla, cocoa mix, and cocoa powder; mix well. Gently fold in Cool Whip until combined. Spread evenly over the Oreo crust.

  • Mint Layer: In a large bowl, whisk pudding mix and milk for 2 minutes until thickened. Stir in mint extract and green food coloring until desired shade is reached. Fold in Cool Whip until smooth. Spread over the chocolate cheesecake layer.

  • Cover and refrigerate for at least 4 hours or overnight to set.

  • Before serving, spread whipped cream over the top. Garnish with maraschino cherries and green sprinkles.

  • Slice and serve chilled.

  • For best flavor, use fresh mint extract.

  • Adjust sweetness by tasting pudding layer before folding in Cool Whip.
