18 chocolate sandwich cookies (e.g., Oreos)
Brownie Layer:
-
3/4 cup unsalted butter, melted
-
1/2 cup brown sugar (100g)
-
1/2 cup granulated sugar (100g)
-
2 tsp vanilla extract (10mL)
-
2/3 cup cocoa powder (65g)
-
1/2 cup all-purpose flour (60g)
-
2 tsp espresso powder
-
1/2 tsp kosher salt
-
1/2 tsp baking powder
-
2 eggs
-
1/2 cup semi-sweet chocolate chips
Instructions
-
Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper and lightly grease it.
-
Make the cookie dough layer: In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in the egg and vanilla.
-
Add flour, salt, baking powder, and baking soda. Mix until just combined. Fold in the chocolate chips and oats.
-
Press the cookie dough evenly into the bottom of the prepared pan.
-
Add the cookie layer: Place the chocolate sandwich cookies in a single layer over the cookie dough, slightly pressing them in.
-
Make the brownie layer: In another bowl, whisk together the melted butter, sugars, and vanilla until smooth.
-
Add cocoa powder, flour, espresso powder, salt, and baking powder. Mix until combined, then beat in the eggs. Fold in the chocolate chips.
-
Pour the brownie batter over the cookie layer and spread evenly.
-
Bake for 35–40 minutes, or until a toothpick inserted into the center comes out mostly clean with a few moist crumbs.
- Cool completely before slicing into squares.
Notes
-
For ultra-clean cuts, chill the brownies for an hour before slicing.
-
Espresso powder enhances the chocolate flavor without tasting like coffee.
-
Use parchment paper to lift brownies out easily for slicing.
- Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for a fudgier texture.
