Cookie Dough Layer:

  • 1 cup unsalted butter, softened (226g)

  • 3/4 cup brown sugar (150g)

  • 1/2 cup granulated sugar (100g)

  • 1 egg

  • 2 tsp vanilla extract (10mL)

  • 2 cups all-purpose flour (240g)

  • 1 1/4 tsp kosher salt

  • 1/2 tsp baking powder

  • 1/4 tsp baking soda

  • 1 cup semi-sweet chocolate chips

  • 1/2 cup quick oats

Cookie Layer:

  • 18 chocolate sandwich cookies (e.g., Oreos)

Brownie Layer:

  • 3/4 cup unsalted butter, melted

  • 1/2 cup brown sugar (100g)

  • 1/2 cup granulated sugar (100g)

  • 2 tsp vanilla extract (10mL)

  • 2/3 cup cocoa powder (65g)

  • 1/2 cup all-purpose flour (60g)

  • 2 tsp espresso powder

  • 1/2 tsp kosher salt

  • 1/2 tsp baking powder

  • 2 eggs

  • 1/2 cup semi-sweet chocolate chips


Instructions

  • Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper and lightly grease it.

  • Make the cookie dough layer: In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in the egg and vanilla.

  • Add flour, salt, baking powder, and baking soda. Mix until just combined. Fold in the chocolate chips and oats.

  • Press the cookie dough evenly into the bottom of the prepared pan.

  • Add the cookie layer: Place the chocolate sandwich cookies in a single layer over the cookie dough, slightly pressing them in.

  • Make the brownie layer: In another bowl, whisk together the melted butter, sugars, and vanilla until smooth.

  • Add cocoa powder, flour, espresso powder, salt, and baking powder. Mix until combined, then beat in the eggs. Fold in the chocolate chips.

  • Pour the brownie batter over the cookie layer and spread evenly.

  • Bake for 35–40 minutes, or until a toothpick inserted into the center comes out mostly clean with a few moist crumbs.

  • Cool completely before slicing into squares.
