Scale
For the Streusel Topping:
- ¾ cup packed light brown sugar
- ½ cup self-rising flour
- ½ cup (1 stick) unsalted butter, softened
- 1 cup uncooked old-fashioned oats
- ½ cup chopped pecans
For the Cobbler Filling:
- 1 cup self-rising flour
- 1 cup sugar
- 1 cup milk
- 2 teaspoons banana extract (optional)
- ½ cup (1 stick) butter, melted
- 4 ripe bananas, sliced
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish or similar size.
- For the streusel topping: In a medium bowl, combine the brown sugar, self-rising flour, softened butter, oats, and chopped pecans. Mix until crumbly and well combined. Set aside.
- For the cobbler filling: In a separate bowl, whisk together the self-rising flour, sugar, milk, and banana extract (if using). Stir in the melted butter until fully incorporated.
- Pour the batter into the prepared baking dish, then layer the sliced bananas evenly over the batter.
- Sprinkle the streusel topping evenly over the bananas.
- Bake for 45-50 minutes or until the cobbler is golden brown and bubbly.
- Allow the cobbler to cool for a few minutes before serving.
Notes
- For a richer flavor, serve the cobbler warm with a scoop of vanilla ice cream or a dollop of whipped cream.
- If you don’t have banana extract, the recipe will still turn out delicious with just the natural flavor of the ripe bananas.
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat before serving for best results.
