Ingredients
For the Chicken:
- 4 boneless, skinless chicken breasts
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 tbsp olive oil
For the Creamy Spinach Topping:
- 4 oz (115g) cream cheese, softened
- 1/2 cup sour cream (or Greek yogurt)
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/4 tsp red pepper flakes (optional)
- 2 cups fresh spinach, chopped
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
Instructions
Step 1: Prepare the Chicken
- Preheat your oven to 375°F (190°C).
- Season the chicken breasts with salt, black pepper, garlic powder, and onion powder.
- Heat the olive oil in a large skillet over medium heat. Once hot, add the chicken breasts and cook for 6-7 minutes per side until golden brown and cooked through (internal temperature should reach 165°F or 74°C).
- Remove the chicken from the skillet and set aside. You can place the cooked chicken on a baking dish.
Step 2: Prepare the Creamy Spinach Topping
- In a separate pan, sauté the garlic in a little olive oil until fragrant (about 1 minute).
- Add the chopped spinach to the pan and cook until wilted, about 2-3 minutes.
- In a mixing bowl, combine the softened cream cheese, sour cream (or Greek yogurt), Italian seasoning, red pepper flakes (optional), and the cooked spinach mixture. Stir in the mozzarella and Parmesan cheeses, mixing until everything is well combined and creamy.
Step 3: Assemble and Bake
- Spread the creamy spinach topping evenly over the cooked chicken breasts in the baking dish.
- Place the casserole in the oven and bake for 15-20 minutes, or until the top is bubbly and golden.
Step 4: Serve
- Remove from the oven and allow the casserole to cool for a few minutes before serving.
- Serve with a side of roasted vegetables, mashed potatoes, or a light salad for a complete meal.
Notes
- If you prefer a spicier casserole, you can add extra red pepper flakes or even a dash of hot sauce to the creamy spinach mixture.
- You can substitute Greek yogurt for sour cream for a slightly healthier version of the dish without sacrificing creaminess.
- This dish can be made ahead of time. Simply prepare everything up to Step 3, then cover and refrigerate. When ready to bake, simply follow Step 4, adding extra baking time if needed.
