Description

This spinach stuffed chicken is a savory, creamy delight with tender chicken breasts filled with a flavorful spinach and cream cheese mixture. The perfect balance of creamy, cheesy, and savory flavors, this dish makes for a delicious and healthy dinner option.


Ingredients

  • 4 chicken breasts

  • 1 tablespoon olive oil or avocado oil

  • 1 teaspoon paprika

  • 1 teaspoon salt (divided)

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon onion powder

  • 4 ounces cream cheese, softened

  • 1/4 cup grated Parmesan cheese

  • 2 tablespoons mayonnaise

  • 1 1/2 cups chopped fresh spinach

  • 1 teaspoon garlic, minced

  • 1/2 teaspoon red pepper flakes


Instructions

  • Preheat the Oven:

    • Preheat your oven to 375°F (190°C).

  • Prepare the Chicken:

    • Pat the chicken breasts dry with paper towels. Carefully make a pocket in each chicken breast by slicing horizontally without cutting all the way through. Set aside.

  • Make the Spinach Filling:

    • In a medium-sized bowl, combine the softened cream cheese, grated Parmesan, mayonnaise, minced garlic, red pepper flakes, 1/2 teaspoon salt, garlic powder, and onion powder. Stir until the mixture is smooth.

    • Add the chopped spinach to the cream cheese mixture and stir until well combined.

  • Stuff the Chicken:

    • Stuff each chicken breast with the spinach cream cheese mixture, evenly dividing the filling between the four breasts. Use toothpicks to secure the opening of each chicken breast, if necessary.

  • Season and Sear:

    • Rub the outside of the chicken breasts with olive oil, paprika, and the remaining 1/2 teaspoon salt.

    • Heat a large oven-safe skillet over medium-high heat. Once hot, add the chicken breasts and sear them for 2-3 minutes on each side until golden brown.

  • Bake:

    • Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

 

  • Serve:

    • Remove the toothpicks from the chicken and serve hot.

Notes

  • You can use frozen spinach instead of fresh, but make sure to thaw and drain it before using.

  • For extra flavor, sprinkle some additional Parmesan cheese on top of the chicken before baking.
