4 chicken breasts

1 tablespoon olive oil or avocado oil

1 teaspoon paprika

1 teaspoon salt (divided)

4 ounces cream cheese, softened

1/4 cup grated Parmesan cheese

2 tablespoons mayonnaise

1 1/2 cups chopped fresh spinach

1 teaspoon garlic, minced

Instructions

Preheat the Oven:

Preheat your oven to 375°F (190°C).

Prepare the Chicken:

Pat the chicken breasts dry with paper towels. Carefully make a pocket in each chicken breast by slicing horizontally without cutting all the way through. Set aside.

Make the Spinach Filling:

In a medium-sized bowl, combine the softened cream cheese, grated Parmesan, mayonnaise, minced garlic, red pepper flakes, 1/2 teaspoon salt, garlic powder, and onion powder. Stir until the mixture is smooth.

Add the chopped spinach to the cream cheese mixture and stir until well combined.

Stuff each chicken breast with the spinach cream cheese mixture, evenly dividing the filling between the four breasts. Use toothpicks to secure the opening of each chicken breast, if necessary.

Rub the outside of the chicken breasts with olive oil, paprika, and the remaining 1/2 teaspoon salt.
