Pasta & Sauce

  • 8 oz fettuccine or tagliatelle pasta
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 4 oz gorgonzola cheese, crumbled
  • Reserved pasta water, as needed
  • Salt, to taste
  • Black pepper, to taste

Garnish

  • 2 tbsp fresh parsley, chopped
  • Optional: toasted pine nuts or extra crumbled gorgonzola

Instructions

  1. Prepare Your Ingredients: Slice the steak into bite-sized strips for quick cooking and even distribution. Mince the garlic and crumble the gorgonzola cheese so it’s ready to melt smoothly into the sauce.
  2. Cook the Pasta: Bring a large pot of salted water to a boil. Cook the pasta until al dente, about 8-10 minutes. Reserve some pasta water before draining the pasta.
  3. Sear the Steak: Heat olive oil in a skillet over medium-high heat. Add steak strips, season with salt and pepper, and cook for 2-3 minutes per side until browned but still tender. Remove steak and set aside.
  4. Make the Sauce: Reduce heat to medium and sauté minced garlic in the same skillet until fragrant. Pour in heavy cream and stir in crumbled gorgonzola cheese. Let cheese melt gently while stirring to form a smooth sauce.
  5. Combine Everything: Add cooked pasta and steak back into the skillet. Toss to coat evenly with the creamy sauce. If sauce is too thick, loosen with reserved pasta water until desired consistency is reached.
  6. Finish and Serve: Sprinkle freshly chopped parsley for color and freshness. Serve immediately while warm and comforting.
