For the Crust:
- 1 1/4 cups all-purpose flour

- 3–4 tablespoons ice water
For the Almond Crumble:
- 1/2 cup all-purpose flour
- 1/3 cup rolled oats
- 1/3 cup sliced almonds
- 1/3 cup brown sugar, packed
- 1/4 teaspoon cinnamon
- 1/4 cup unsalted butter, melted
For the Filling:
- 4 cups fresh strawberries, hulled and sliced
- 1/2 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon pure vanilla extract
Instructions
- Prepare the Crust:
- In a large bowl, combine the flour, granulated sugar, and salt. Add the cold cubed butter and mix with a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Gradually add the ice water, 1 tablespoon at a time, mixing until the dough comes together. You may need 3 to 4 tablespoons of water, depending on your dough’s consistency.
- Form the dough into a disk, wrap it in plastic wrap, and chill for at least 30 minutes.
- Prepare the Almond Crumble:
- In a bowl, combine the flour, oats, sliced almonds, brown sugar, and cinnamon.
- Pour in the melted butter and mix until everything is well coated and crumbly. Set aside.
- Prepare the Filling:
- In a large bowl, toss the sliced strawberries with granulated sugar, cornstarch, lemon juice, and vanilla extract. Stir until the strawberries are well coated.
- Assemble the Pie:
- Preheat the oven to 375°F (190°C).
- Roll out the chilled pie dough on a floured surface into a 9-inch circle. Carefully transfer the dough to a 9-inch pie dish, trimming any excess dough around the edges.
- Pour the strawberry filling into the prepared crust.
- Sprinkle the almond crumble mixture evenly over the top of the strawberries.
- Bake the Pie:
- Bake the pie in the preheated oven for 40–45 minutes, or until the crust is golden and the crumble is crisp.
- Allow the pie to cool slightly before slicing and serving.
Notes
- You can substitute frozen strawberries if fresh strawberries aren’t available, but fresh strawberries yield the best texture and flavor.
- For a golden crust, you can brush the edges of the dough with a little egg wash before baking.
