  • 1/2 cup all-purpose flour
  • 1/3 cup rolled oats
  • 1/3 cup sliced almonds
  • 1/3 cup brown sugar, packed
  • 1/4 teaspoon cinnamon
  • 1/4 cup unsalted butter, melted

For the Filling:

  • 4 cups fresh strawberries, hulled and sliced
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon pure vanilla extract

Instructions

  • Prepare the Crust:
    • In a large bowl, combine the flour, granulated sugar, and salt. Add the cold cubed butter and mix with a pastry cutter or your fingers until the mixture resembles coarse crumbs.
    • Gradually add the ice water, 1 tablespoon at a time, mixing until the dough comes together. You may need 3 to 4 tablespoons of water, depending on your dough’s consistency.
    • Form the dough into a disk, wrap it in plastic wrap, and chill for at least 30 minutes.
  • Prepare the Almond Crumble:
    • In a bowl, combine the flour, oats, sliced almonds, brown sugar, and cinnamon.
    • Pour in the melted butter and mix until everything is well coated and crumbly. Set aside.
  • Prepare the Filling:
    • In a large bowl, toss the sliced strawberries with granulated sugar, cornstarch, lemon juice, and vanilla extract. Stir until the strawberries are well coated.
  • Assemble the Pie:
    • Preheat the oven to 375°F (190°C).
    • Roll out the chilled pie dough on a floured surface into a 9-inch circle. Carefully transfer the dough to a 9-inch pie dish, trimming any excess dough around the edges.
    • Pour the strawberry filling into the prepared crust.
    • Sprinkle the almond crumble mixture evenly over the top of the strawberries.
  • Bake the Pie:
    • Bake the pie in the preheated oven for 40–45 minutes, or until the crust is golden and the crumble is crisp.
    • Allow the pie to cool slightly before slicing and serving.

Notes

  • You can substitute frozen strawberries if fresh strawberries aren’t available, but fresh strawberries yield the best texture and flavor.
