Instructions
- Make the Crust: Preheat your oven to 350°F (175°C).
In a bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Stir until the mixture is evenly combined.
Press the mixture into the bottom and up the sides of a 9-inch pie dish.
Bake for 8-10 minutes, then remove from the oven and allow it to cool completely. - Prepare the Cream Filling:
In a medium bowl, beat the softened cream cheese and powdered sugar until smooth. Add the vanilla extract and continue to beat until combined.
In a separate bowl, whip the chilled heavy whipping cream until stiff peaks form.
Gently fold the whipped cream into the cream cheese mixture until smooth and fluffy. - Assemble the Pie:
Spread the cream filling evenly into the cooled graham cracker crust. Smooth the top with a spatula. Refrigerate for at least 2 hours to allow it to set. - Make the Strawberry Topping:
In a small saucepan, combine the sliced strawberries, granulated sugar, cornstarch, water, and lemon juice.
Cook over medium heat, stirring frequently, until the mixture begins to thicken and the strawberries soften (about 5-7 minutes).
Remove from heat and let cool to room temperature. - Top the Pie:
Once the pie has set, spread the cooled strawberry topping evenly over the cream filling.
Return the pie to the refrigerator for an additional 30 minutes to chill before serving. - Serve:
