- 1 tbsp lemon juice
- 1 tsp cornstarch
For the Frosting:
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 2 tbsp milk
- 1/2 tsp vanilla extract
Instructions
- Make the Cupcakes:
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a separate large bowl, cream the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until just combined.
- Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Let the cupcakes cool completely on a wire rack.
- Make the Strawberry Filling:
- In a small saucepan, combine the chopped strawberries, sugar, lemon juice, and cornstarch. Cook over medium heat, stirring occasionally, until the mixture thickens and the strawberries release their juices (about 5-7 minutes).
- Remove from heat and let it cool before filling the cupcakes.
- Make the Frosting:
- In a medium bowl, beat the softened butter until smooth and creamy.
- Gradually add the powdered sugar, milk, and vanilla extract, beating until light and fluffy.
- Assemble the Cupcakes:
- Once the cupcakes are cooled, use a small knife or cupcake corer to remove a small portion from the center of each cupcake.
- Spoon or pipe the strawberry filling into the hole of each cupcake.
- Pipe or spread the frosting on top of the cupcakes.
