For the Cupcakes:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1/2 cup whole milk

For the Strawberry Filling:

  • 1 cup fresh strawberries, finely chopped
  • 1/4 cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tsp cornstarch

For the Frosting:

  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2 tbsp milk
  • 1/2 tsp vanilla extract

Instructions

  • Make the Cupcakes:
    • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
    • In a medium bowl, whisk together the flour, baking powder, and salt.
    • In a separate large bowl, cream the softened butter and granulated sugar until light and fluffy.
    • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
    • Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until just combined.
    • Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
    • Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Let the cupcakes cool completely on a wire rack.
  • Make the Strawberry Filling:
    • In a small saucepan, combine the chopped strawberries, sugar, lemon juice, and cornstarch. Cook over medium heat, stirring occasionally, until the mixture thickens and the strawberries release their juices (about 5-7 minutes).
    • Remove from heat and let it cool before filling the cupcakes.
  • Make the Frosting:
    • In a medium bowl, beat the softened butter until smooth and creamy.
    • Gradually add the powdered sugar, milk, and vanilla extract, beating until light and fluffy.
  • Assemble the Cupcakes:
    • Once the cupcakes are cooled, use a small knife or cupcake corer to remove a small portion from the center of each cupcake.
    • Spoon or pipe the strawberry filling into the hole of each cupcake.
    • Pipe or spread the frosting on top of the cupcakes.

Notes

  • If you want a stronger strawberry flavor in the frosting, you can mix in a tablespoon of strawberry puree.
