For the Strawberry Cream Cheese Frosting

  • ¼ cup unsalted butter, softened

  • 4 oz full-fat cream cheese, softened

  • to 2 cups icing sugar, sifted

  • 1 tsp vanilla extract

  • 34 tbsp freeze-dried strawberry powder


Instructions

  • Make the cookie dough: Cream butter, granulated sugar, and brown sugar until fluffy. Add vanilla and egg; beat until combined.

  • Combine dry ingredients: In a separate bowl, whisk flour, matcha powder, salt, baking powder, and baking soda. Gradually mix into the wet ingredients.

  • Fold in white chocolate: Mix until evenly distributed. Chill the dough for 30 minutes.

  • Bake: Preheat oven to 350°F (175°C). Scoop dough onto a lined baking sheet. Bake for 10–12 minutes until edges are set. Let cool completely.

  • Make the matcha frosting: Beat butter until smooth. Add icing sugar and matcha powder. Add milk or cream gradually until desired consistency is reached.

  • Frost the cookies: Spread a thin layer of matcha frosting on each cookie. Chill 10–15 minutes.

  • Make strawberry frosting: Beat butter and icing sugar until fluffy. Add vanilla and strawberry powder, then cream cheese. Mix until smooth.

  • Top with strawberry frosting: Spread or pipe the strawberry frosting over the matcha layer. Chill again for clean results.

  • Sift matcha and strawberry powders for a smooth frosting.

  • Chill the matcha frosting layer before adding strawberry to prevent blending.

  • Cookies must be completely cool before frosting.
