Description

This light and creamy strawberry mousse is a delightful treat that blends the richness of cream cheese or coconut cream with the fresh sweetness of strawberries. It’s a simple and delicious dessert that’s perfect for any occasion, with a hint of vanilla bean paste to elevate the flavor.


Ingredients

  • 8 oz cream cheese (or coconut cream for a dairy-free option)

  • 4 oz yogurt (or additional cream cheese or coconut cream)

  • 1 cup powdered sugar (or sugar-free alternative)

  • 5 medium-sized strawberries (optional)

  • ¼ tsp vanilla bean paste


Instructions

  • In a mixing bowl, combine the cream cheese (or coconut cream) and yogurt (or additional cream cheese/coconut cream). Use an electric mixer or a whisk to blend them together until smooth and creamy.

  • Gradually add in the powdered sugar (or sugar-free alternative) and mix until well combined.

  • If using fresh strawberries, blend the strawberries in a blender or food processor until smooth. Optionally, you can leave some chunks for added texture.

  • Add the strawberry puree (if using) and vanilla bean paste to the cream mixture. Stir until fully combined.

  • Spoon the mousse into serving dishes or bowls and refrigerate for at least 2 hours, or until set.

 

  • Garnish with additional strawberries, whipped cream, or mint leaves if desired. Serve chilled.

Notes

  • For a lighter version, you can use Greek yogurt instead of regular yogurt.

  • If you prefer a sweeter mousse, you can adjust the amount of powdered sugar to your taste.

  • For a dairy-free version, use coconut cream, non-dairy yogurt, and a sugar-free sweetener of your choice.
