Description

 

This moist and buttery strawberry pound cake is a delightful combination of rich, dense cake and sweet, fresh strawberries. With a subtle vanilla flavor and a dusting of powdered sugar, it’s the perfect treat for any occasion, from afternoon tea to dessert after dinner.


Ingredients

  • 2 cups (250g) all-purpose flour, plus extra for coating strawberries
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup (226g) unsalted butter, softened to room temperature
  • 1 1/4 cups (250g) granulated sugar
  • 4 large eggs, at room temperature
  • 1 tbsp vanilla extract
  • 1/2 cup (120ml) whole milk, at room temperature
  • 1 1/2 cups (225g) fresh strawberries, hulled and chopped into small pieces
  • Powdered sugar, for dusting

Instructions

  • Preheat your oven to 350°F (175°C). Grease and flour a loaf pan or bundt pan.
  • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 4 minutes.
  • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  • Gradually add the dry ingredients to the butter mixture, alternating with the milk, starting and ending with the dry ingredients. Mix until just combined.
  • Toss the chopped strawberries in a small amount of flour (this helps prevent them from sinking to the bottom of the cake during baking). Gently fold the strawberries into the batter.
  • Pour the batter into the prepared pan and spread evenly.
  • Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  • Once cooled, dust with powdered sugar before serving.

Notes

  • You can use frozen strawberries if fresh ones aren’t available, just make sure they’re thawed and well-drained.
  • For added richness, you can substitute sour cream or yogurt for the milk.
  • This cake can be stored at room temperature for up to 3 days, or in the fridge for up to 1 week.
