Ingredients
Scale
- 2 cups (250g) all-purpose flour, plus extra for coating strawberries
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup (226g) unsalted butter, softened to room temperature
- 1 1/4 cups (250g) granulated sugar
- 4 large eggs, at room temperature
- 1 tbsp vanilla extract
- 1/2 cup (120ml) whole milk, at room temperature
- 1 1/2 cups (225g) fresh strawberries, hulled and chopped into small pieces
- Powdered sugar, for dusting
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a loaf pan or bundt pan.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 4 minutes.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the butter mixture, alternating with the milk, starting and ending with the dry ingredients. Mix until just combined.
- Toss the chopped strawberries in a small amount of flour (this helps prevent them from sinking to the bottom of the cake during baking). Gently fold the strawberries into the batter.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- Once cooled, dust with powdered sugar before serving.
Notes
- You can use frozen strawberries if fresh ones aren’t available, just make sure they’re thawed and well-drained.
- For added richness, you can substitute sour cream or yogurt for the milk.
- This cake can be stored at room temperature for up to 3 days, or in the fridge for up to 1 week.
