- ¼ cup unsalted butter
- 3 tablespoons heavy whipping cream
- ½ teaspoon strawberry extract

- 1 drop pink food coloring
- ¼ cup powdered sugar

Melt the Ingredients:
- Add the white chocolate chips to a medium bowl and set aside.
- In a small saucepan, melt the butter over medium heat. Stir in the heavy whipping cream and bring to a simmer.

Combine with Chocolate:
- As soon as the mixture comes to a simmer, pour it over the white chocolate chips. Let it sit for 1-2 minutes to soften the chocolate.
- Add the strawberry extract, vanilla extract, and pink food coloring. Whisk until smooth and fully incorporated.
- If needed, microwave the mixture for 15 seconds at a time to fully melt the chocolate.

Chill the Mixture:
- Cover the bowl with plastic wrap and refrigerate for 30 minutes to 1 hour, or until the mixture is firm enough to scoop.

Shape the Truffles:
- Scoop 1 to 1 ½ tablespoons of the strawberry truffle mixture and roll them into balls.
- Roll each truffle in powdered sugar until coated.

Final Chill:
- Refrigerate the truffles for another 30 minutes to 1 hour before serving.
Notes
- For extra strawberry flavor, you can add a bit more strawberry extract or finely chopped dried strawberries.
- If the truffle mixture is too soft to scoop, chill it a bit longer before rolling.
