For the Cookies:
- 1 box strawberry cake mix (15.25 oz)
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup white chocolate chips (optional)
- Red and pink sprinkles (optional)
For the White Chocolate Drizzle:
- 1/2 cup white chocolate chips
- 1 teaspoon coconut oil or vegetable shortening
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
- In a large bowl, combine the strawberry cake mix, softened butter, eggs, and vanilla extract. Mix until smooth and well combined.
- Fold in the white chocolate chips and red and pink sprinkles, if using.
- Scoop dough by tablespoonfuls and roll into balls. Place them onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 9-10 minutes, or until the edges of the cookies are slightly golden. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
- For the drizzle, melt the white chocolate chips with coconut oil (or vegetable shortening) in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth.
- Drizzle the melted white chocolate over the cooled cookies and add more sprinkles if desired.
- Allow the drizzle to set before serving.
Notes
- If you don’t have white chocolate chips, you can use regular chocolate chips or skip the drizzle entirely.
- To make the drizzle even smoother, you can add a little extra coconut oil or shortening.
- These cookies are best enjoyed within a few days, but they can be stored in an airtight container for up to a week.
