These soft and chewy Valentine Strawberry Cookies are bursting with the sweet, fruity flavor of strawberry cake mix, topped with a decadent white chocolate drizzle. Perfect for any Valentine’s celebration, they’re easy to make and great for gifting or sharing with loved ones.

For the Cookies:

  • 1 box strawberry cake mix (15.25 oz)
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup white chocolate chips (optional)
  • Red and pink sprinkles (optional)

For the White Chocolate Drizzle:

  • 1/2 cup white chocolate chips
  • 1 teaspoon coconut oil or vegetable shortening

Instructions

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  • In a large bowl, combine the strawberry cake mix, softened butter, eggs, and vanilla extract. Mix until smooth and well combined.
  • Fold in the white chocolate chips and red and pink sprinkles, if using.
  • Scoop dough by tablespoonfuls and roll into balls. Place them onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 9-10 minutes, or until the edges of the cookies are slightly golden. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  • For the drizzle, melt the white chocolate chips with coconut oil (or vegetable shortening) in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth.
  • Drizzle the melted white chocolate over the cooled cookies and add more sprinkles if desired.
  • Allow the drizzle to set before serving.

Notes

  • If you don’t have white chocolate chips, you can use regular chocolate chips or skip the drizzle entirely.
  • To make the drizzle even smoother, you can add a little extra coconut oil or shortening.
  • These cookies are best enjoyed within a few days, but they can be stored in an airtight container for up to a week.
