For the Cookies:

  • 3 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon kosher salt
  • 1 cup white sugar
  • 2 sticks unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • Red and pink food coloring

For the Garnish:

  • Valentine’s Day sprinkles (optional)

Instructions

  • Prepare the Dough:
    • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
    • In a large mixing bowl, beat together the sugar and softened butter until light and fluffy, about 3 minutes.
    • Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  • Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  • Divide the dough into two equal portions. Leave one portion plain and add red food coloring to the other portion. Start with a few drops of red food coloring, then mix until you reach the desired shade. You can also make another portion pink if desired.
  • Chill the Dough:
    • Wrap each portion of dough in plastic wrap and refrigerate for at least 30 minutes to firm up.
  • Roll Out the Dough:
    • On a lightly floured surface, roll out each portion of dough into a rectangle, about ¼-inch thick.
  • Assemble the Pinwheels:
    • Place the plain dough rectangle on top of the colored dough rectangle. Gently press the two layers together.
    • Starting from one edge, carefully roll up the dough into a log, making sure to keep the layers aligned.
  • Wrap the rolled dough in plastic wrap and refrigerate for at least 30 minutes or until firm.
  • Preheat the Oven:
    • Preheat the oven to 350°F (175°C).
  • Slice and Bake:
    • Using a sharp knife, slice the dough into ¼-inch thick cookies. Place them on a baking sheet lined with parchment paper.
    • Bake for 8-10 minutes or until the edges are lightly golden.
  • Garnish and Serve:
    • While the cookies are still warm, sprinkle them with Valentine’s Day sprinkles. Let them cool on a wire rack.

  • If the dough becomes too soft while rolling, place it back in the fridge for a few minutes to firm up before continuing.
