For the Cookies:
- 3 cups all-purpose flour
- 1 ½ teaspoons baking powder
- ½ teaspoon kosher salt
- 1 cup white sugar
- 2 sticks unsalted butter, softened
- 2 large eggs
- 1 teaspoon pure vanilla extract
- Red and pink food coloring

Instructions
- Prepare the Dough:
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large mixing bowl, beat together the sugar and softened butter until light and fluffy, about 3 minutes.
- Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the butter mixture, mixing until just combined.
- Divide the dough into two equal portions. Leave one portion plain and add red food coloring to the other portion. Start with a few drops of red food coloring, then mix until you reach the desired shade. You can also make another portion pink if desired.
- Chill the Dough:
- Wrap each portion of dough in plastic wrap and refrigerate for at least 30 minutes to firm up.
- Roll Out the Dough:
- On a lightly floured surface, roll out each portion of dough into a rectangle, about ¼-inch thick.
- Assemble the Pinwheels:
- Place the plain dough rectangle on top of the colored dough rectangle. Gently press the two layers together.
- Starting from one edge, carefully roll up the dough into a log, making sure to keep the layers aligned.
- Wrap the rolled dough in plastic wrap and refrigerate for at least 30 minutes or until firm.
- Preheat the Oven:
- Preheat the oven to 350°F (175°C).
- Slice and Bake:
- Using a sharp knife, slice the dough into ¼-inch thick cookies. Place them on a baking sheet lined with parchment paper.
- Bake for 8-10 minutes or until the edges are lightly golden.
- Garnish and Serve:
- While the cookies are still warm, sprinkle them with Valentine’s Day sprinkles. Let them cool on a wire rack.

- Feel free to adjust the colors as desired for other holidays or occasions.
- If the dough becomes too soft while rolling, place it back in the fridge for a few minutes to firm up before continuing.
