Description

This Vegan Nog Chia Pudding is a creamy, dairy-free dessert that’s perfect for the holiday season. Infused with the rich flavors of eggnog, cinnamon, and nutmeg, this pudding is simple to make, yet feels like a special treat. Top it with fresh fruit, nuts, or coconut whipped cream for a festive touch!

Ingredients

Scale
  • 2 cups vegan eggnog (store-bought or homemade)
  • ½ cup chia seeds
  • 1 teaspoon vanilla extract (optional)
  • ¼ teaspoon ground cinnamon
  • ⅛ teaspoon ground nutmeg (plus more for garnish)
  • Maple syrup or agave (optional, to sweeten further)

Optional Toppings:

  • Coconut whipped cream
  • Fresh berries
  • Sliced bananas
  • Crushed nuts
  • Granola

Instructions

  • In a medium bowl, whisk together the vegan eggnog, chia seeds, vanilla extract (if using), cinnamon, and nutmeg.
  • Taste and add maple syrup or agave for additional sweetness, if desired.
  • Cover the bowl and refrigerate for at least 4 hours, or preferably overnight, to allow the chia seeds to absorb the liquid and thicken into a pudding-like consistency.
  • Once the pudding has set, stir it well to break up any clumps.
  • Serve in individual bowls or jars and top with your choice of coconut whipped cream, fresh berries, sliced bananas, crushed nuts, or granola.
  • Garnish with a sprinkle of nutmeg before serving.

Notes

  • If you prefer a thicker consistency, you can add more chia seeds, or if you like it creamier, add more eggnog.
  • For a lighter, dairy-free option, use coconut or almond milk in place of vegan eggnog and add spices like cinnamon and nutmeg for flavor.
  • The chia pudding can be stored in the refrigerator for up to 3 days, making it a great make-ahead treat.
