Ingredients
Scale
- 2 cups vegan eggnog (store-bought or homemade)
- ½ cup chia seeds
- 1 teaspoon vanilla extract (optional)
- ¼ teaspoon ground cinnamon
- ⅛ teaspoon ground nutmeg (plus more for garnish)
- Maple syrup or agave (optional, to sweeten further)
Optional Toppings:
- Coconut whipped cream
- Fresh berries
- Sliced bananas
- Crushed nuts
- Granola
Instructions
- In a medium bowl, whisk together the vegan eggnog, chia seeds, vanilla extract (if using), cinnamon, and nutmeg.
- Taste and add maple syrup or agave for additional sweetness, if desired.
- Cover the bowl and refrigerate for at least 4 hours, or preferably overnight, to allow the chia seeds to absorb the liquid and thicken into a pudding-like consistency.
- Once the pudding has set, stir it well to break up any clumps.
- Serve in individual bowls or jars and top with your choice of coconut whipped cream, fresh berries, sliced bananas, crushed nuts, or granola.
- Garnish with a sprinkle of nutmeg before serving.
Notes
- If you prefer a thicker consistency, you can add more chia seeds, or if you like it creamier, add more eggnog.
- For a lighter, dairy-free option, use coconut or almond milk in place of vegan eggnog and add spices like cinnamon and nutmeg for flavor.
- The chia pudding can be stored in the refrigerator for up to 3 days, making it a great make-ahead treat.
