Description

This Western Omelet Quiche is a savory, delicious dish that combines all the classic flavors of a western omelet in a rich, custardy quiche. With smoked ham, colorful bell peppers, green onions, and melted cheese, this quiche is perfect for brunch or a hearty breakfast. The buttery, flaky pie crust is the ideal base for the flavorful filling!

  • 1 9-inch deep dish pie shell (store-bought or homemade)

  • 4 green onions, thinly sliced

  • 1/3 cup chopped green bell pepper

  • 1/3 cup chopped red bell pepper

  • 2 tbsp butter

  • 4 oz smoked ham, chopped and divided

  • 1 1/2 cups colby jack or cheddar cheese (divided)

  • 1 cup heavy cream

  • 6 large eggs

  • 1 tsp garlic salt

  • 1/2 tsp black pepper

  • 1/2 tsp onion powder

  • 1/4 tsp ground mustard


Instructions

  • Preheat the Oven:

    • Preheat your oven to 375°F (190°C).

  • Prepare the Vegetables and Ham:

    • In a large skillet, melt the butter over medium heat.

    • Add the green onions, green bell pepper, and red bell pepper to the skillet and sauté for 4-5 minutes, until the vegetables are softened.

  • Cook the Ham:

    • Add the chopped smoked ham to the skillet with the vegetables and cook for another 2-3 minutes until heated through. Remove the skillet from heat and set aside to cool slightly.

  • Prepare the Quiche Filling:

    • In a large bowl, whisk together the eggs, heavy cream, garlic salt, black pepper, onion powder, and ground mustard until smooth and well combined.

  • Assemble the Quiche:

    • Layer the sautéed vegetable and ham mixture evenly over the bottom of the pie shell.

    • Sprinkle 1 cup of the cheese evenly over the vegetable and ham mixture.

    • Pour the egg mixture over the top, making sure it fills the pie shell and covers the other ingredients.

  • Top with Remaining Cheese:

    • Sprinkle the remaining 1/2 cup of cheese on top of the quiche.

  • Bake the Quiche:

    • Place the quiche in the preheated oven and bake for 35-40 minutes, or until the quiche is set and lightly golden on top. You can check for doneness by inserting a knife into the center—it should come out clean when the quiche is done.

 

  • Cool and Serve:

    • Allow the quiche to cool for 5-10 minutes before slicing. Serve warm and enjoy!

Notes

  • For a more flavorful quiche, feel free to add additional ingredients such as diced tomatoes, spinach, or mushrooms.

  • You can prepare this quiche ahead of time and refrigerate it. To reheat, bake it in the oven at 350°F (175°C) for about 15 minutes until warmed through.

  • If you prefer a lighter version, you can substitute half-and-half for the heavy cream.
