Instructions

  • Make the Cake:
    • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
    • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
    • In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until just combined.
    • Stir in the melted white chocolate chips, then gently fold in the fresh raspberries.
    • Divide the batter evenly between the prepared cake pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  • Make the Frosting:
    • In a medium bowl, beat the softened butter until creamy. Gradually add the powdered sugar, 1 cup at a time, beating well after each addition.
    • Stir in the melted white chocolate chips and vanilla extract. Add milk, one tablespoon at a time, until the frosting reaches your desired consistency (smooth and spreadable).
  • Assemble the Cake:
    • Once the cake layers are completely cooled, spread a layer of frosting on top of one cake. Place the second cake on top and frost the top and sides of the entire cake.
    • Garnish with fresh raspberries for decoration.
