Lemon Icing:

1 ¾ cups (220 g) powdered sugar

2 tablespoons fresh-squeezed lemon juice

Instructions

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.

In a large bowl, beat the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.

Add the lemon zest to the butter mixture and mix until well combined.

In a separate bowl, whisk together the all-purpose flour, cornstarch, and salt. Gradually add the dry ingredients to the wet ingredients and mix until just combined.

Roll the dough into 1-inch balls and place them on the prepared baking sheet, spacing them about 1 inch apart.

Gently press down on each dough ball with the back of a fork or your fingers to flatten them slightly.

Bake for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

While the cookies cool, prepare the lemon icing. In a small bowl, whisk together the powdered sugar and fresh-squeezed lemon juice until smooth.

Once the cookies are completely cool, drizzle the lemon icing over the top of each cookie. Garnish with additional lemon zest, if desired.
