Description

Buttercream frosting is a creamy, smooth, and versatile frosting perfect for cakes and cupcakes. Made with simple ingredients like butter, powdered sugar, and cream, it offers customizable flavors from classic vanilla to chocolate and fruity variations. This easy-to-make frosting spreads and pipes beautifully, making it ideal for any celebration or casual treat.

Ingredients

Scale

Basic Ingredients

  • 1 cup (227g) unsalted butter, softened to room temperature
  • 4 cups (480g) powdered sugar, sifted
  • 24 tablespoons heavy cream or milk
  • 2 teaspoons vanilla extract
  • Pinch of salt

Optional Ingredients for Variations

  • 23 tablespoons cocoa powder (for Chocolate Buttercream)
  • 23 tablespoons fresh strawberry purée or 1 tablespoon freeze-dried strawberry powder (for Strawberry Buttercream)
  • Zest and juice of 1 lemon (for Lemon Buttercream)
  • 1/4 cup homemade caramel sauce and pinch of sea salt (for Salted Caramel Buttercream)
  • Vegan butter and non-dairy milk (for Dairy-Free Buttercream)
  • Food coloring (for colored frostings)

Instructions

  1. Soften the Butter: Start with room temperature unsalted butter and beat it on medium speed until it becomes smooth, creamy, and pale in color, usually 3 to 5 minutes. Properly softened butter is key to achieving a light, fluffy texture.
  2. Gradually Add Powdered Sugar: Add the powdered sugar in small batches while beating on low speed to prevent sugar clouds in your kitchen. Slowly incorporating sugar helps it dissolve into the butter and avoids graininess.
  3. Mix in Cream and Vanilla Extract: Pour in 2 tablespoons of heavy cream (or milk) and the vanilla extract. Increase mixer speed to medium-high and whip until light and fluffy, about 3 to 4 minutes. Add more cream if needed to reach a silky, spreadable consistency.
  4. Adjust Consistency and Flavor: If frosting is too stiff, add cream one teaspoon at a time until desired consistency. For thicker frosting, add more powdered sugar as needed. Taste and tweak sweetness or flavor accordingly.
  5. Add Color or Flavor Variations: Gently fold in cocoa powder, fruit purée, caramel sauce, food coloring, or other flavorings depending on your chosen variation. Mix just until combined for even color and flavor.

Notes

  • Use room temperature butter that is soft but not melted for best results.
  • Sift powdered sugar to avoid lumps and ensure smooth frosting.
  • Beat frosting well to achieve a light and airy texture.
  • Incorporate sugar slowly to prevent a powdered sugar cloud in your kitchen.
  • Avoid over-beating to prevent a soft or grainy texture.
  • If frosting becomes too warm and soft, chill briefly then re-whip.
  • Store leftover frosting in an airtight container in the fridge for up to one week.
  • Buttercream can be frozen for up to three months; thaw overnight in the fridge before use.
  • Use natural colorings like beet juice, matcha, or turmeric for chemical-free hues.
