Description

Potato Chip Chicken is a crispy, flavorful twist on traditional breaded chicken. Coated in crushed potato chips and baked or fried to golden perfection, this easy recipe offers a crunchy, savory crust with juicy chicken inside — perfect for a quick weeknight dinner or casual get-together.

Ingredients

Scale
  • 3 boneless skinless chicken breasts (about 1 pound)

  • 1 large bag potato chips, crushed

  • 2 eggs, beaten

  • 2 tablespoons seasoning salt (such as Lawry’s)

Instructions

  • Preheat oven to 375°F (190°C) or prepare a skillet with oil if frying.

  • Place crushed potato chips in a shallow bowl.

  • In another bowl, beat the eggs and stir in the seasoning salt.

  • Dip each chicken breast first into the egg mixture, then coat thoroughly with crushed potato chips, pressing to adhere.

  • For baking: place coated chicken breasts on a greased baking sheet and bake for 25–30 minutes, or until chicken is cooked through and the coating is crispy and golden.

  • For frying: heat oil in a skillet over medium heat and cook chicken breasts for 5–7 minutes per side until golden and fully cooked. Drain on paper towels.

  • Let rest a few minutes before serving.

Notes

  • Use your favorite flavored potato chips to vary the taste (e.g., BBQ or sour cream & onion).

  • For extra crispiness, spray the coated chicken lightly with cooking spray before baking.

  • Ensure chicken reaches an internal temperature of 165°F (74°C) before serving.
